  • 1 lb ground turkey
  • 2 medium sweet potatoes diced
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper chopped
  • 1 can black beans drained and rinsed
  • 1 tsp cumin
  • 1 tsp paprika
  • salt and pepper to taste
  • 2 tbsp olive oil
  • 1 cup shredded cheese optional

Instructions
 

  • Preheat oven to 400°F (200°C). Grease a baking dish and set aside.
  • In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing for 3–4 minutes until fragrant.
  • Add ground turkey and cook until browned, breaking it apart as it cooks. Season with salt and pepper.
  • Add diced sweet potatoes and chopped bell pepper. Stir and cook for 10–15 minutes, until the sweet potatoes are tender.
  • Stir in black beans, cumin, and paprika. Mix well and cook for 2–3 more minutes.
  • Transfer the mixture to the prepared baking dish. Top with shredded cheese if desired.
  • Bake for 20 minutes or until the cheese is melted and bubbly.
  • Remove from oven, let cool slightly, and serve warm. Enjoy!

Notes

This dish can be made ahead and stored in the fridge for up to 4 days or frozen for up to 3 months. Add chili powder or jalapeños for a spicier version. Perfectly pairs with a green salad or Greek yogurt on the side.
