  • 2 medium zucchinis, diced
  • 1 large sweet potato, peeled and diced Can substitute with butternut squash or cauliflower.
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil
  • 0.25 cup beef broth Can use vegetable broth for a vegetarian version.

Preparation

  • Start by peeling and dicing the sweet potato. Ensure they’re uniform in size for even cooking.
  • Chop the zucchinis and onions. Mince the garlic to release its flavor.

Cooking

  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until they soften, about 2-3 minutes.
  • Introduce the ground beef to the skillet, breaking it apart as it cooks until browned, about 5-7 minutes.
  • Add in the diced sweet potatoes, stir well, cover the skillet, and cook for about 10 minutes.
  • Incorporate the diced zucchini, paprika, salt, and black pepper. Stir well to combine.
  • Pour in the beef broth, cover, and let it simmer for an additional 5-10 minutes until vegetables are tender.
  • Taste the mixture and adjust seasoning as needed.
  • Remove from heat, let it rest, then serve hot, optionally garnished with fresh herbs.

Notes

For added flavor, consider marinating the ground beef before cooking. Adjust seasoning based on taste and enjoy leftovers within 3-4 days in the fridge.
