  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon paprika

  • 4 cups cooked rice
  • 1 cup cherry tomatoes, halved
  • 1 each avocado, sliced
  • 1/4 cup chopped cilantro

For the Creamy Garlic Sauce

  • 1/2 cup sour cream
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice

Preparation

  • Gather all ingredients. Peel and devein the shrimp if not already done, and rinse them under cold water. Chop cherry tomatoes, slice avocado, and chop cilantro.

Marinate

  • In a mixing bowl, combine the shrimp with olive oil, paprika, salt, and pepper. Toss to coat and let sit for 10-15 minutes.

Grill

  • Preheat your grill to medium-high heat. Skewer shrimp in groups of 3-4.
  • Place skewered shrimp on the grill. Cook for 2-3 minutes on each side until opaque and slightly charred.

Make Sauce

  • In a small bowl, combine sour cream, minced garlic, and lemon juice. Stir until smooth and season with salt and pepper.

Assemble

  • On a serving plate, start with a layer of cooked rice, top with grilled shrimp, add cherry tomatoes and avocado slices, and drizzle with creamy garlic sauce.
  • Garnish with chopped cilantro.

Notes

For added flavor, consider grilling vegetables alongside shrimp. Skip the step for soaked wooden skewers to avoid burning.
