Preparation

  • Begin by gathering all your ingredients.
  • In a bowl, blend olive oil, garlic powder, onion powder, salt, and pepper.
  • Using a brush or your hands, coat the chicken breasts evenly with the olive oil mixture.
  • Preheat your grill to medium-high heat.

Cooking

  • Place the chicken breasts on the grill and cook for about 6-7 minutes on each side or until they reach an internal temperature of 165°F.
  • During the last few minutes of grilling, spoon salsa verde evenly over each chicken breast.
  • Sprinkle the shredded pepper jack cheese over the salsa verde and cover the grill lid to melt the cheese.
  • Check to ensure the cheese is melted and the chicken is cooked through, adjusting cooking time as needed.
  • Remove the chicken from the grill and let it rest for a few minutes before slicing.
  • Serve the chicken warm, either on its own or in a taco.

Notes

For added flavor, marinate the chicken for an hour before grilling. Pair it with fresh sides like salads or grilled veggies.
