Ingrédients
  

For the Salmon

  • 4 fillets salmon fresh or frozen, wild-caught preferred
  • 2 limes juiced
  • 2 tbsp olive oil
  • salt and pepper to taste

For the Avocado Mango Salsa

  • 1 ripe avocado diced
  • 1 ripe mango diced
  • 1/2 red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1 jalapeño diced, optional

Instructions
 

  • In a bowl, mix lime juice, olive oil, salt, and pepper. Add the salmon fillets and marinate for 15 minutes.
  • While the salmon marinates, combine diced avocado, mango, red onion, cilantro, and jalapeño in a bowl. Mix gently and season with a pinch of salt.
  • Preheat the grill to medium-high heat.
  • Grill the salmon for 5–7 minutes per side until flaky and opaque.
  • Plate the grilled salmon and top with the prepared salsa.
  • Drizzle with a bit of olive oil or lime juice and serve immediately.

Notes

For a tropical twist, add pineapple to the salsa. To make it spicier, use extra jalapeño or a dash of cayenne pepper. This dish pairs beautifully with quinoa salad or grilled vegetables.
