  • 200 g Halloumi cheese Slice into 1/2-inch thick pieces
  • 4 slices Bread of choice (sourdough, whole grain, or ciabatta)
  • 2 tablespoons Olive oil For brushing halloumi and toasting bread

Vegetables and Spread

  • 1 cup Lettuce (any leafy variety) Rinsed and dried
  • 1 medium Tomato, sliced
  • 1 small Cucumber, sliced
  • 1/2 small Red onion, thinly sliced
  • 1/4 cup Hummus Can substitute with yogurt spread

Instructions
 

Preparation

  • Gather all ingredients. Rinse the lettuce, and slice the tomatoes, cucumbers, and red onions. Slice the halloumi into 1/2-inch thick pieces.

Cooking

  • Preheat a grill or grill pan over medium heat. Brush both sides of the halloumi slices with olive oil and grill for about 2-3 minutes on each side until golden brown and slightly crispy.
  • While the cheese is grilling, lightly toast the bread slices on the grill for 1-2 minutes.

Assembly

  • Spread a generous layer of hummus on each slice of toasted bread.
  • Layer with lettuce, grilled halloumi slices, tomatoes, cucumbers, and red onions.
  • Top with another slice of bread and press gently to hold the layers.

Serving

  • Cut the sandwiches in half and serve them immediately while warm and crispy.

Notes

Experiment with different toppings like grilled peppers, fresh basil, or avocado. Can customize for dietary needs by using gluten-free bread or plant-based cheese.
