  • 4 ears ears of corn, husked Fresh corn recommended for best flavor
  • 1/2 cup unsalted butter, softened For a richer flavor
  • 2 tablespoons lime juice Fresh is best
  • 1 teaspoon chili powder Adjust for heat level
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 bunch fresh cilantro For garnish (optional but recommended)

Preparation

  • Husk the corn and remove all the silk.
  • Preheat your grill to medium-high heat.
  • In a mixing bowl, combine the softened butter, lime juice, chili powder, salt, and black pepper. Whisk until well incorporated.

Grilling

  • Generously coat each ear of corn with the chili lime butter mixture.
  • Place the corn on the grill and close the lid. Grill for about 10-15 minutes, turning occasionally.
  • Check for doneness; the corn should be tender and slightly charred.
  • Remove from the grill and brush each ear with more chili lime butter before serving.
  • Garnish with fresh cilantro if desired and serve immediately.

Notes

Store any leftovers in an airtight container in the refrigerator for 2-3 days. For longer storage, wrap in plastic wrap and freeze for up to six months. Reheat by grilling or microwaving.
