  • 2 cups spinach Washed and chopped
  • 1 cup kale Washed and chopped
  • 1 medium cucumber Chopped
  • 1 medium green apple Cored and chopped
  • 1 avocado Sliced
  • 4 cups vegetable broth Use low-sodium if desired
  • 1 tablespoon olive oil For sautéing
  • 1 teaspoon lemon juice To enhance flavor

Instructions
 

Preparation

  • Start by washing all your greens thoroughly. Chop the spinach and kale into bite-sized pieces. Dice the cucumber and green apple, and slice the avocado.
  • Heat a tablespoon of olive oil in a large pot over medium heat.

Cooking

  • Once hot, add the chopped cucumber and sauté for 2-3 minutes.
  • Next, add the chopped spinach, kale, and the vegetable broth to the pot. Bring this mixture to a gentle boil.
  • Once boiling, reduce the heat to a simmer. Let the soup cook for about 10 minutes.

Blending

  • After simmering, remove the pot from heat and let the soup cool slightly.
  • Using an immersion blender, blend the soup until it reaches a smooth consistency, adding the avocado at this stage.

Finishing Touches

  • Once blended, add the lemon juice and salt to taste. Stir well to incorporate the flavors.
  • Your Green Detox Soup is now ready to be served! Ladle it into bowls and serve warm or chilled.

Notes

Store in an airtight container for up to three days in the fridge. For longer storage, freeze portions in freezer-safe bags or containers.
