  • 4 pieces chicken breasts

  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, chopped
  • 1/2 cup feta cheese, crumbled Optional for dairy-free version.
  • 1/4 cup olives, sliced Can substitute with capers if unavailable.
  • 1 piece onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • Salt and pepper to taste

Preparation

  • Begin by prepping all your ingredients: chop the onions, mince the garlic, and halve the cherry tomatoes. Ensure your rice is cooked ahead of time.

Cooking

  • In a large skillet, heat the olive oil over medium heat. Add the chopped onions and minced garlic, sautéing until fragrant and translucent (about 3-4 minutes).
  • Introduce the chicken breasts into the skillet. Cook for about 5-7 minutes on each side, allowing them to brown nicely.
  • While the chicken is browning, combine the cooked rice, cherry tomatoes, chopped spinach, crumbled feta cheese, sliced olives, oregano, basil, salt, and pepper in a large bowl. Mix until well combined.
  • Once the chicken is browned, arrange the chicken breasts at the bottom of a baking dish and spoon the rice mixture over the top.
  • Preheat your oven to 375°F (190°C) and bake the assembled dish for 25-30 minutes or until the chicken is fully cooked (internal temperature of 165°F/75°C).
  • Remove the casserole from the oven and let it sit for a few minutes before serving.
  • Serve warm, garnished with extra feta or fresh herbs if desired.

Notes

For enhanced flavor, you can marinate the chicken in olive oil, lemon juice, and herbs for at least an hour. This dish also holds its flavor well as leftovers; can be refrigerated and eaten up to four days later.
