Preparation

  • Start by gathering all your ingredients: puffed quinoa, dark chocolate chips, honey or maple syrup, vanilla extract, and a pinch of salt.
  • In a microwave-safe bowl, melt the dark chocolate chips in 30-second intervals, stirring in between until smooth.
  • Mix in the puffed quinoa, sweetener (honey or maple syrup), vanilla extract, and a pinch of salt until thoroughly combined.
  • Carefully coat all the quinoa with the chocolate mixture.
  • Using a tablespoon, scoop out the mixture and roll it into bite-sized balls.
  • Arrange the chocolate-covered quinoa bites on a parchment-lined tray with space between each for setting.
  • Refrigerate for at least 30 minutes to firm them up.
