  • Wash the baby potatoes thoroughly. Halve each potato for even cooking.
  • In a mixing bowl, combine olive oil, minced garlic, salt, and pepper.
  • Toss the halved potatoes in the garlic mixture until well-coated.

Cooking

  • Spread the coated potatoes in a single layer on a baking sheet.
  • Bake in a preheated oven at 200°C (400°F) for 25-30 minutes, checking for doneness after 25 minutes.
  • Once golden brown and tender, remove from the oven and garnish with parsley.

Serving

  • Serve warm, drizzling any remaining garlic oil from the baking sheet over the potatoes.
