  • 1.5 pounds red potatoes, chopped

  • 4 cloves garlic, minced
  • 1 tablespoon garlic powder
  • 1 tablespoon Italian seasoning
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon pepper

Preparation

  • Spray the inside of your crockpot with non-stick cooking spray.
  • In the prepared crockpot, add chopped chicken and potatoes.
  • Add minced garlic, garlic powder, Italian seasoning, olive oil, salt, and pepper. Stir to combine.

Cooking

  • Cover the crockpot and set to cook on HIGH for 2-3 hours or LOW for 4-6 hours.
  • Stir the mixture halfway through cooking if possible.
  • Check doneness with a meat thermometer; it should read 165°F in the chicken.

Finishing Touches

  • About 10-15 minutes before serving, sprinkle shredded Parmesan cheese on top.
  • Replace the lid to melt the cheese.
  • Mix everything gently to combine before serving.

  • Serve immediately, ensuring everyone gets a scoop of chicken, potatoes, and melted cheese.
