Preparation

  • Pat the lamb chops dry with paper towels to remove excess moisture.
  • Season both sides of the chops with salt and black pepper.

Create the Marinade

  • In a small bowl, mix together the olive oil, minced garlic, chopped rosemary, chopped thyme, and lemon juice.
  • Stir well to ensure everything is combined evenly.

Marinate the Lamb Chops

  • Pour the marinade over the lamb chops, ensuring each chop is evenly coated.
  • Cover with plastic wrap or transfer to a resealable bag and refrigerate for at least 30 minutes.

Cook the Lamb Chops

  • Remove the marinated lamb chops from the refrigerator about 10-15 minutes before cooking to bring them to room temperature.
  • Heat a heavy skillet or a cast-iron pan over medium-high heat and add the remaining tablespoon of olive oil.
  • Once the oil is hot, carefully add the lamb chops to the pan and sear for 3-4 minutes on the first side.
  • Flip the lamb chops using tongs and cook for an additional 2-3 minutes for medium doneness.

Rest Before Serving

  • Transfer the lamb chops to a plate and loosely tent them with foil.
  • Allow them to rest for about 5 minutes before serving.

Notes

For the best flavor, marinate the lamb chops for up to 24 hours. You can substitute ingredients like olive oil with avocado oil or grapeseed oil as needed.
