Salad Base

  • 2 cups corn (canned or frozen) If using frozen corn, cook according to package instructions.
  • 1 cup diced tomatoes Fresh ripe tomatoes enhance flavor.
  • 1 cup shredded cheddar cheese Can substitute with dairy-free cheese for vegan option.
  • 1/2 cup diced red onion Can be substituted with chopped bell peppers if allergic.
  • 1 cup Fritos corn chips Add just before serving to retain crunch.
  • 1/2 cup mayonnaise Use vegan mayonnaise for a dairy-free version.
  • 1 tablespoon lime juice Can be substituted with lemon juice.
  • to taste salt and pepper Adjust according to preference.

Instructions
 

Preparation

  • Gather all your ingredients.
  • If using frozen corn, cook according to package instructions and let cool if necessary.
  • Drain canned corn if using, and rinse thoroughly.
  • Dice the tomatoes and red onion, and shred the cheddar cheese.

Mixing the Salad

  • In a large mixing bowl, combine corn, diced tomatoes, diced red onion, and shredded cheddar cheese. Stir gently.
  • In a separate small bowl, mix mayonnaise and lime juice to create the dressing.
  • Pour the dressing over the corn mixture and toss gently.
  • Season with salt and pepper to taste.
  • Cover and chill in the refrigerator for at least 30 minutes.

Serving

  • Just before serving, fold in the Fritos to maintain their crunch.
  • Serve chilled or at room temperature.

Notes

Can be prepared ahead of time, but add Fritos just before serving to keep them crunchy. Great for picnics and summer gatherings.
