  • 1 jar green olives (pitted)
  • 1 cup all-purpose flour Can substitute gluten-free flour.

  • 1 cup breadcrumbs Use gluten-free breadcrumbs if needed.

For the Garlic Aioli

  • 1/2 cup mayonnaise For vegan option, use vegan mayonnaise.
  • 2 cloves garlic (minced)
  • 1 tablespoon lemon juice

Preparation

  • Start by draining the olives from the jar. Pat them dry with paper towels to ensure the coating sticks well during frying.
  • Create a breading station with three shallow bowls: one for flour, one with beaten eggs, and one with breadcrumbs.

Breading the Olives

  • Dip each olive in flour, coat it in the egg mixture, then roll it in the breadcrumbs until fully coated.

Frying

  • Heat oil in a deep pan over medium heat (to about 350°F or 175°C). Test temperature with a breadcrumb; it should sizzle.
  • Carefully add the breaded olives in batches and fry them until golden brown, about 2-3 minutes.
  • Remove the olives with a slotted spoon and let them drain on paper towels.

Garlic Aioli Preparation

  • In a bowl, mix together mayonnaise, minced garlic, lemon juice, salt, and pepper until well combined.

Serving

  • Serve the fried olives warm alongside the garlic aioli for dipping.

Notes

You can customize the recipe by using different herbs in the aioli or a variety of olives. For a twist, consider stuffing olives before frying.
