Preparation

  • Start by gathering and preparing all your ingredients. Shred the cooked fried chicken into bite-sized pieces and get your corn ready to grill. Chop the cilantro, measure out the mayonnaise and lime juice, and crumble the cotija cheese.

Cooking

  • Grill the corn until charred, about 8–10 minutes on medium heat. Let it cool slightly before cutting the kernels off the cob.
  • In a mixing bowl, combine mayonnaise, lime juice, chopped cilantro, salt, and pepper. Stir until well mixed.
  • Fold the grilled corn into the mayonnaise mixture, ensuring every kernel is coated.
  • Heat the corn tortillas either on a skillet or wrapped in foil in the oven for about 5 minutes.

Assembly

  • Take each warm tortilla and layer in shredded fried chicken. Spoon in the corn mixture on top, distributing it evenly.
