Preparation

  • Gather all your ingredients - slice the onions, dice the chicken breast, and mince the garlic.

Cooking the Base

  • In a large pan over medium heat, warm the olive oil. Add the sliced onions with a pinch of salt and cook for about 15-20 minutes until caramelized.

Flavor Addition

  • Add minced garlic and thyme to the caramelized onions, cooking for an additional 1-2 minutes until fragrant.

Cooking Chicken

  • Push the onions to the side and add the diced chicken, seasoning with salt and pepper. Cook until browned, about 5-7 minutes.

Combine Ingredients

  • Stir in the orzo pasta, mixing well to combine.
  • Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 10-12 minutes, stirring occasionally.

Final Touches

  • Once the orzo is tender and most of the broth is absorbed, stir in the shredded cheese until melted.
  • Taste and adjust seasoning. Garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days, or freeze for up to 3 months. To reheat, add a splash of broth or water if needed.
