  • 2 cups cooked rice Use long-grain white or jasmine rice.
  • 2 tablespoons olive oil For frying the onions.
  • 1 pound chicken breast, sliced Can be substituted with tofu or mushrooms for a vegetarian option.
  • 2 large onions, thinly sliced These will be caramelized for the dish.
  • 2 cups beef broth Substitute with vegetable or chicken broth if needed.
  • 1 teaspoon thyme Dried thyme works best.

  • 1 cup shredded Gruyère cheese Can be replaced with mozzarella or any melty cheese.

Preparation

  • Start by gathering all your ingredients. Make sure your rice is cooked and ready to go.
  • Slice the chicken breast and onions and set them aside for cooking.

Cooking

  • Heat olive oil in a skillet over medium heat and add the sliced onions. Cook until caramelized, about 15 minutes.
  • Season the sliced chicken breast with salt and pepper.
  • Push the caramelized onions to one side of the skillet, then add the seasoned chicken to the empty side. Cook until browned, about 5-7 minutes.
  • Pour in the beef broth and add thyme. Let simmer for about 10 minutes.
  • Taste the mixture and adjust seasoning as necessary.

Assembly

  • In a serving bowl, layer the cooked rice at the bottom.
  • Spoon the chicken and onion mixture over the rice.
  • Top with shredded Gruyère cheese while still hot to allow it to melt slightly.

Notes

For added flavor, consider adding a splash of white wine when adding the broth. If vegetarian, replace chicken with mushrooms or tofu and use vegetable broth instead.
