Preparation

  • Gather all your ingredients. Chop the bacon, dice the bell peppers and tomatoes, and set the eggs aside for whisking.

Cooking

  • In a nonstick pan over medium heat, sauté the chopped bacon until crispy (about 5–7 minutes). Remove from the pan and set aside, keeping the fat in the pan.
  • Add the diced bell peppers and tomatoes to the pan. Sauté for 2–3 minutes until softened.
  • Whisk the eggs with salt and pepper in a separate bowl until fully combined.
  • Pour the whisked eggs into the pan with veggies. Cook over medium-low heat, stirring gently until eggs are fluffy and set (about 3–5 minutes).
  • Fold in the cooked bacon and shredded cheese into the egg mixture until melted.
  • Warm tortillas in the microwave for about 20 seconds to make them pliable.
  • Spoon the egg mixture onto each tortilla, roll tightly, tucking in the ends.
  • Toast the rolled burritos seam-side down in a clean pan over medium heat for 2–3 minutes until golden.
  • Serve warm, optionally with toppings and sides.

Notes

These burritos are freezer-friendly and can be stored for up to 2 months. Make sure to allow them to cool completely before freezing.
