Ingrédients
  

Vegetables

  • 2 pieces bell peppers (any variety, deseeded and cut into chunks)
  • 1 medium zucchini (sliced into rounds)
  • 1 medium red onion (cut into chunks)
  • 1 cup cherry tomatoes (whole)

Marinade

  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder

Skewers

  • 8 pieces Skewers (wooden or metal) Soak wooden skewers in water for at least 30 minutes before use.

Preparation

  • Wash all the vegetables under cold water and cut the bell peppers, zucchini, and red onion into large, even chunks. Leave the cherry tomatoes whole.

Soak Skewers

  • If using wooden skewers, soak them in water for at least 30 minutes.

Thread the Veggies

  • Thread the prepared vegetables onto the skewers, alternating between bell peppers, zucchini, red onion, and cherry tomatoes.

Make the Marinade

  • In a small mixing bowl, combine olive oil, salt, pepper, and garlic powder. Mix well.

Brush the Skewers

  • Evenly coat the vegetable skewers with the marinade, covering all sides.

Preheat Your Grill

  • Preheat the grill to medium-high heat, about 10–15 minutes.

Grill the Veggies

  • Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally.

Check for Doneness

  • Check the vegetables for tenderness; they should still have some bite.

Remove and Serve

  • Allow the skewers to cool for a couple of minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Can be reheated on a skillet or grill.
