  • 30 pieces Ritz crackers 1 box of Ritz crackers (about 30 crackers)
  • 1 cup peanut butter Smooth or chunky based on preference
  • 1 cup chocolate chips Semi-sweet or milk chocolate
  • 0.5 cup sprinkles Any festive color
  • 1 cup white chocolate Optional, for drizzling or coating

Preparation

  • Make sure all your ingredients are measured and ready to go.
  • Spread a generous tablespoon of peanut butter between two Ritz crackers to create a sandwich.
  • In a microwave-safe bowl, heat the chocolate chips for about 30 seconds at a time, stirring in between, until smooth.
  • Once the chocolate is melted and smooth, dip each peanut butter-filled Ritz cracker sandwich fully into the chocolate and use a fork to remove excess chocolate.
  • Set the coated sandwiches on a baking sheet lined with parchment paper. Sprinkle the tops with colorful sprinkles while the chocolate is still wet.
  • Let the cookies cool at room temperature or place them in the fridge for about 15 minutes to help the chocolate firm up faster.
  • If desired, melt white chocolate and drizzle it over the hardened chocolate-coated sandwiches.
  • Once set, serve your Festive Ritz Cracker Christmas Cookies immediately or store them in an airtight container.

Notes

Store cookies in an airtight container for up to a week at room temperature or freeze for up to three months. Allow to thaw at room temperature before serving.
