  • 1 cup crushed pineapple Drained thoroughly
  • 1 cup chopped pecans Can substitute with sunflower seeds if nut-free
  • 1 cup shredded coconut Can be adjusted or replaced with finely grated carrots

Preparation

  • Gather all your ingredients, ensuring the eggs are at room temperature and the crushed pineapple is drained thoroughly.

Mixing

  • Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the yellow cake mix, eggs, and vegetable oil. Mix until smooth, about 2-3 minutes.
  • Gradually add the sugar, stirring gently until fully incorporated, then fold in the drained crushed pineapple.
  • Fold in the chopped pecans and shredded coconut evenly throughout the batter.

Baking

  • Grease a 9×13 inch baking pan and pour in the batter, spreading it evenly.
  • Bake for 30-35 minutes or until a toothpick inserted comes out clean and it’s lightly golden.

Cooling and Serving

  • Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  • Slice into squares and serve plain or with whipped cream, vanilla ice cream, or fresh fruit.

Notes

To keep cake fresh, store in an airtight container at room temperature for up to three days or refrigerate for a week. This cake can also be frozen for up to three months. Don't skip greasing the pan and always check doneness with a toothpick.
