Ingrédients
  

For the base

  • 1 lb ground beef Can substitute with ground turkey or chicken for a leaner option.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn) Feel free to use fresh vegetables if preferred.
  • 2 tbsp tomato paste
  • 1 cup beef broth Ensure it is gluten-free if necessary.
  • 1 tsp Worcestershire sauce Use a gluten-free version for gluten sensitivity.
  • to taste salt and pepper Adjust to your taste preference.

For the topping

  • 3 cups mashed potatoes (prepared from about 3 large potatoes) Use room temperature for better spreading.
  • 2 tbsp butter Dot over the mashed potatoes before baking.
  • 1/4 cup shredded cheddar cheese (optional) Add for a cheesy topping.

Preparation

  • Gather all your ingredients. Chop the onion and garlic, and measure out your frozen veggies, beef broth, and seasoning.

Cooking the Base

  • In a large skillet, brown the ground beef over medium heat until fully cooked, about 5-7 minutes. Drain the excess fat.
  • Add the chopped onion and minced garlic to the skillet and cook for about 3-4 minutes until the onion becomes translucent.
  • Stir in the frozen mixed vegetables and cook for a minute.
  • Incorporate tomato paste, broth, and Worcestershire sauce. Season with salt and pepper and let simmer for 5-7 minutes until thickened.

Assembly and Baking

  • Transfer the beef and vegetable mixture to a casserole dish and spread evenly.
  • Top with the prepared mashed potatoes, spreading to cover the mixture completely.
  • Dot the top of the mashed potatoes with butter and optionally sprinkle with cheddar cheese.
  • Bake in a preheated oven for 20-30 minutes until the top is golden brown.

Serving

  • Let the casserole cool for about 5 minutes before serving.

Notes

To freeze, cool the casserole completely and store in an airtight container. Reheat in the oven or microwave when needed.
