Preparation

  • Gather all your ingredients and start by chopping the onion, dicing the carrots and celery, and mincing the garlic.

Cooking

  • Heat a splash of olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  • Stir in the minced garlic and cook for an additional minute.
  • Add the ground chicken, breaking it apart with a spoon as it cooks for 5-7 minutes until browned.
  • Incorporate the diced carrots and celery to the pot, stirring well and sautéing for about 5 minutes.
  • Pour in the chicken broth and add the can of diced tomatoes, stirring to combine.
  • Sprinkle in the dried oregano, basil, salt, and pepper to taste and let the mixture come to a simmer.
  • Lower the heat and let it cook for 20-30 minutes.
  • Taste and adjust the seasoning if needed.
  • Serve hot, garnished with fresh parsley.

Notes

For added depth, try using homemade broth. Feel free to add more vegetables or a protein alternative to suit your dietary needs.
