Preparation

  • Wash the pineapple thoroughly, peel it, and chop it into small, uniform pieces.

Cooking

  • In a large pot, combine the chopped pineapple, sugar, and lemon juice. Heat over medium heat, stirring until the sugar dissolves completely (about 5 minutes).
  • Increase the heat to medium-high and cook until it reaches a full rolling boil (about 5-10 minutes).
  • Once boiled, add the pectin according to package instructions and stir completely.
  • Return to a boil for an additional 5-10 minutes while stirring, until the mixture thickens.

Jarring

  • Sterilize your jars by boiling them in water for 10 minutes.
  • Pour the hot jam into sterilized jars, leaving about 1/4 inch of space at the top. Use a funnel if available.
  • Wipe the rims of the jars clean and seal tightly.
  • Allow jars to cool completely on the countertop, listening for the popping sound that indicates they are sealed.
  • Label jars with the date and refrigerate for immediate use or process for longer storage.

Notes

Store refrigerated jam for up to 3 weeks; unopened jars last for up to a year in a cool, dark place. You can use other fruits to create different jam variations or spice it up with ginger or jalapeños.
