  • 1 onion, chopped
  • 3 cups mixed vegetables (e.g., corn, carrots, green beans) Fresh or frozen options can be used.
  • 4 medium potatoes, sliced Sweet potatoes can be used as an alternative.
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup shredded cheddar cheese Dairy-free cheese can be used for dairy-free diets.
  • to taste Salt and pepper Season according to preference.
  • 1 tsp garlic powder
  • 1 tsp paprika

Preparation

  • Gather all the ingredients to ensure you have everything you need. Chop the onion, slice the potatoes, and measure out the mixed vegetables and spices.
  • In a large skillet over medium heat, brown the ground beef with the chopped onion. Stir occasionally until the beef is cooked through and the onions are translucent, about 6-8 minutes.

Assembly

  • In a 9x13 inch baking dish, layer the sliced potatoes evenly across the bottom.
  • Layer the mixed vegetables over the potatoes.
  • Spoon the cooked beef and onions over the vegetables, distributing evenly.
  • Pour the diced tomatoes over the layered ingredients and season with garlic powder, paprika, salt, and pepper.

Baking

  • Cover the baking dish tightly with aluminum foil and bake for 45 minutes at 375°F (190°C).
  • After 45 minutes, remove the foil and sprinkle the shredded cheddar cheese on top. Return the dish to the oven uncovered and bake for an additional 15 minutes until the cheese is melted and bubbly.

Serving

  • Allow the casserole to cool for a few minutes before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days or frozen for up to three months. Reheat in the microwave or oven.
