Preparation

  • Gather all your ingredients. Wash and chop your vegetables, chop any cooked meats you plan to use.

Cooking

  • Preheat your oven to 375°F (190°C). In a large bowl, whisk together the eggs and season with salt and pepper.
  • Fold in the cheese, mixed vegetables, and cooked meats into the egg mixture.
  • In an oven-safe skillet, heat olive oil over medium heat.
  • Pour the egg mixture into the heated skillet and cook for about 5 minutes, stirring occasionally.
  • Transfer the skillet to the preheated oven and bake for 15-20 minutes or until set and golden on top.
  • Remove from the oven and let the frittata cool slightly before serving to ensure easy slicing.

Notes

Cool leftover frittata in an airtight container for up to three days. Reheat in the microwave or skillet. Freezing is an option for up to two months.
