For the Banana Bread

  • 3 pieces ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 3/4 cup sugar can substitute with coconut sugar or honey
  • 1 large egg, beaten can substitute with flaxseed meal for vegan version
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour can substitute with gluten-free flour blend
  • 1 tablespoon culinary lavender, finely chopped

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
  • In a large mixing bowl, blend melted butter with mashed bananas.
  • Stir in baking soda and a pinch of salt.
  • Fold in sugar until well combined.
  • Mix in the beaten egg and vanilla extract.
  • Gradually add all-purpose flour, folding gently to combine.
  • Fold in the finely chopped culinary lavender.
  • Pour the batter into the greased loaf pan.
  • Bake for 50-60 minutes until a toothpick inserted into the center comes out clean.
  • Cool the bread in the pan for a few minutes, then transfer it to a wire rack to cool completely.

Notes

Store at room temperature in an airtight container for up to 3-5 days, or freeze for longer storage.
