  • 1 whole turkey 12–14 pounds (5.5–6.5 kg)
  • 1 onion quartered
  • 4 cloves garlic minced
  • 4 cups low-sodium chicken broth
  • 1/4 cup olive oil
  • 2 tsp salt
  • 1 tsp black pepper freshly ground
  • 1 tbsp dried thyme
  • 1 tbsp dried rosemary
  • 1 tbsp dried sage

Instructions
 

  • Rinse the turkey under cold water and pat it dry thoroughly with paper towels.
  • In a bowl, mix olive oil, salt, pepper, thyme, rosemary, and sage. Rub the mixture all over the turkey, including under the skin for maximum flavor.
  • Stuff the cavity with the quartered onion and minced garlic.
  • Pour chicken broth into the bottom of the crockpot to keep the turkey moist during cooking.
  • Place the seasoned turkey breast side up in the crockpot, above the broth level if possible.
  • Cover and cook on LOW for 8–10 hours or on HIGH for 4–5 hours, until the turkey reaches an internal temperature of 165°F (75°C).
  • Once done, remove the turkey and let it rest for 20 minutes before carving. Drizzle with some of the broth before serving.

Notes

Let the turkey rest before carving to retain its juices. For crispy skin, broil the turkey in the oven for 5–7 minutes after slow cooking. Store leftovers in airtight containers for up to 4 days or freeze for up to 6 months.
