Preparation

  • Begin by slicing the bell pepper and onion into evenly sized strips. Cut the chicken breasts into small, bite-sized pieces for even cooking.

Cooking

  • Place the chicken in the slow cooker, spreading it out evenly. Add the sliced bell pepper and onion atop the chicken.
  • Sprinkle the fajita seasoning generously over the chicken and vegetables. Mix thoroughly to ensure an even coating.
  • If desired, add the can of diced tomatoes to the slow cooker and stir gently to incorporate.
  • Cover the slow cooker and set it to cook on low for 6-8 hours or high for 3-4 hours.
  • Once cooking is complete, shred the chicken in the slow cooker and mix it with the veggies and juices.
  • Taste the mixture and adjust seasoning if necessary.
  • While the chicken is cooking, warm the tortillas in a skillet or microwave.

Notes
