Preparation

  • Gather all your ingredients. If using dried black-eyed peas, soak them overnight in water. Cook until tender.
  • If using canned peas, skip the soaking and cooking step.

Cooking

  • Drain and rinse black-eyed peas if using canned. Optionally, sauté minced garlic in olive oil for a minute.
  • In a food processor, combine black-eyed peas, sautéed garlic, olive oil, lemon juice, cumin, and salt. Blend until smooth, scraping down the sides as needed.

Adjusting Consistency

  • Add water, a tablespoon at a time, to achieve desired creamy texture.

Final Steps

  • Taste and adjust seasoning if necessary. Transfer to a serving bowl, smooth the top with a spatula, and garnish with olive oil and herbs.

Notes

Can be stored in an airtight container in the fridge for about a week. Freezing is possible; thaw overnight before serving.
