  • 1 lb smoked sausage, sliced Use any type of smoked sausage.
  • 1 cup long-grain rice
  • 1 cup bell peppers, chopped Any color is suitable.
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth Can use gluten-free if necessary.
  • 2 tablespoons Cajun seasoning Adjust to taste.
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Preparation

  • Gather and prepare all the ingredients: slice the smoked sausage, chop the bell peppers, dice the onion, and mince the garlic.

Cooking the Sausage

  • In a large skillet, heat the olive oil over medium heat. Add the sliced smoked sausage and sauté until browned, about 5-7 minutes.
  • Remove the sausage from the skillet and set it aside, leaving the drippings in the pan.

Sautéing Aromatics

  • In the same skillet, add the diced onion and minced garlic. Sauté until softened, around 2-3 minutes.

Adding Vegetables

  • Add the chopped bell peppers and cook for another 3-4 minutes until slightly tender.

Toasting the Rice

  • Stir in the long-grain rice along with the Cajun seasoning. Toast for 1-2 minutes.

Simmering

  • Pour in the chicken broth, add salt and pepper, and bring the mixture to a boil.
  • Reduce heat to low, cover the skillet, and let simmer for 20 minutes.

Final Steps

  • Check if the rice is tender and has absorbed most of the liquid. Stir in the reserved sausage and heat through for an additional 2-3 minutes.
  • Taste and adjust the seasoning if necessary.

Serving

  • Serve warm and enjoy!

Notes

For added brightness, consider adding a splash of lemon juice before serving. Can be garnished with fresh parsley or green onions.
