  • 6 slices slices of bread, cubed Any type of bread, fresh preferred
  • 6 large eggs Room temperature for better mixing
  • 2 cups milk Dairy or plant-based milk can be used
  • 1 cup shredded cheese Cheddar or your choice
  • 1 cup diced vegetables Bell peppers, onions, spinach or your preference
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Preparation

  • Gather all your ingredients and prep the vegetables by dicing bell peppers and chopping onions.
  • Preheat your oven to 350°F (175°C).
  • In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until well blended.
  • Grease a 9×13 inch baking dish with cooking spray or olive oil.
  • Layer the cubed bread evenly at the bottom of the greased baking dish.
  • Sprinkle the diced vegetables over the bread layer and top with shredded cheese.
  • Pour the egg mixture evenly over the bread, vegetables, and cheese.

Baking

  • Bake the casserole in the preheated oven for 30–35 minutes or until set and lightly golden on top.
  • Let the casserole cool for a few minutes before slicing.
  • Serve warm, optionally drizzled with hot sauce or salsa.

Notes

Store leftovers in an airtight container in the fridge for about 3–4 days. Can be reheated in the microwave or oven.
