Preparation

  • Gather all your baking ingredients, ensuring the rhubarb is finely chopped.
  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the egg and vanilla extract to the mixture and mix well.
  • In another bowl, whisk together the flour and baking powder. Gradually mix this into the wet ingredients until just combined.
  • Carefully fold in the chopped rhubarb, taking care not to overmix.

Baking

  • Scoop portions of dough onto a lined baking sheet, leaving space between each scoop.
