Instructions
Preheat oven to 350°F (175°C). Line a baking pan with parchment paper.
In a bowl, mix chocolate cookie crumbs with melted butter until combined. Press into the pan and bake for 10 minutes. Let cool slightly.
In another bowl, beat softened cream cheese until smooth.
Add dulce de leche and sugar, and mix until smooth and creamy.
Add eggs one at a time, mixing after each addition. Stir in vanilla extract.
Fold in chocolate chips, then pour mixture over cooled crust and smooth evenly.
Bake for 30–35 minutes or until edges are set and center slightly jiggles.
Cool completely, then refrigerate at least 2 hours before cutting into bars.
Notes
Top with whipped cream, nuts, or drizzle extra dulce de leche before serving. Store in the fridge up to 5 days or freeze up to 3 months.
