Ingrédients
  

Crust

  • 1 1/2 cups chocolate cookie crumbs
  • 1/2 cup unsalted butter melted

Cheesecake Filling

  • 2 packages (8 oz each) cream cheese softened
  • 1 cup dulce de leche
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup semi-sweet chocolate chips

Instructions
 

  • Preheat oven to 350°F (175°C). Line a baking pan with parchment paper.
  • In a bowl, mix chocolate cookie crumbs with melted butter until combined. Press into the pan and bake for 10 minutes. Let cool slightly.
  • In another bowl, beat softened cream cheese until smooth.
  • Add dulce de leche and sugar, and mix until smooth and creamy.
  • Add eggs one at a time, mixing after each addition. Stir in vanilla extract.
  • Fold in chocolate chips, then pour mixture over cooled crust and smooth evenly.
  • Bake for 30–35 minutes or until edges are set and center slightly jiggles.
  • Cool completely, then refrigerate at least 2 hours before cutting into bars.

Notes

Top with whipped cream, nuts, or drizzle extra dulce de leche before serving. Store in the fridge up to 5 days or freeze up to 3 months.
