  • 1 tablespoon honey Optional, for added sweetness.
  • 1 lime Juice of 1 lime Fresh juice enhances the flavor.
  • As needed cup Ice cubes To keep the drink chilled.

Preparation

  • Gather all your ingredients. Dice the dragon fruit into small cubes, ensuring they are free from skin and seeds.
  • Add the diced dragon fruit to your blender.
  • Pour 2 cups of coconut water over the diced dragon fruit in the blender.
  • Include 1 tablespoon of honey if desired, then squeeze the lime juice directly into the blender.
  • Blend the mixture on high speed until smooth, approximately 30 seconds to a minute.
  • Optional: Strain the blended mixture through a fine mesh sieve into a pitcher to remove any pulp.
  • Chill the mixture in the fridge for about 30 minutes to meld flavors.
  • Fill glasses with ice cubes and pour the dragon fruit refresher over the top. Garnish with a slice of lime or additional dragon fruit pieces.

Notes

Store leftovers in an airtight container in the refrigerator for 1-2 days. Stir before serving again as separation may occur. For a fun twist, freeze any leftovers in an ice cube tray.
