Dressing Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar

Preparation

  • Wash all your fresh produce thoroughly.
  • Slice the cherry tomatoes in half, dice the cucumber into bite-sized pieces, and thinly slice the red onion.

Assembly

  • In a large bowl, combine the mixed greens, chopped vegetables, and avocado.
  • Crumble the feta cheese over the top and add the sliced olives.

Dressing

  • In a small bowl, combine olive oil and balsamic vinegar; whisk until emulsified.
  • Drizzle the dressing over the salad and sprinkle with salt and pepper.
  • Toss gently to combine, being careful not to mash the avocado.
