An irresistible, warm and comforting cobbler featuring succulent peaches and a rich, nutty brown butter topping—easy to make with just a handful of ingredients.
Prepare the peaches: in a large bowl, combine sliced peaches with ½ cup sugar and 1 tsp vanilla extract, and toss to coat. Set aside ~10-15 minutes.
Brown the butter: melt ½ cup unsalted butter in a saucepan over medium heat until golden brown and nutty (about 5-7 minutes); remove from heat immediately.
Pour browned butter over the peach mixture and stir gently to coat.
Make the topping: whisk 1 cup flour, ½ cup sugar, 1 tsp baking powder, and ½ tsp salt in a bowl. Add ½ cup milk and ¼ cup melted butter; stir until just combined (don’t overmix).
Transfer peach mixture to a greased 9×13-inch baking dish.
Drop spoonfuls of the batter evenly over the peaches; don’t worry if some peaches peek through.
Bake for 35-45 minutes or until the topping is golden brown and the peaches are bubbly.
Let cool for 10-15 minutes before serving.
