Pasta Base

  • 8 oz elbow macaroni

Vegetables

  • 1 cup dill pickles, diced
  • 1/2 cup red onion, diced
  • 1 cup celery, diced

Dressing

  • 1 cup mayonnaise Greek yogurt can be used as a lighter substitute.
  • 2 tbsp pickle juice
  • 1 tsp garlic powder
  • to taste salt and pepper

Instructions
 

Preparation

  • Collect and dice dill pickles, red onion, and celery into small, bite-sized pieces. Measure out mayonnaise and pickle juice.

Cooking Pasta

  • Bring a large pot of salted water to a boil, add elbow macaroni, and cook according to package instructions until al dente, about 8-10 minutes.
  • Stir occasionally to prevent sticking.

Mixing Ingredients

  • Once pasta is cooked, drain and rinse under cold water to stop cooking. Let cool for 10-15 minutes.
  • In a large mixing bowl, combine diced dill pickles, red onion, and celery.
  • Add mayonnaise, pickle juice, and garlic powder to the bowl and mix.
  • Fold in cooled macaroni until evenly coated.
  • Season to taste with salt and pepper.

Chilling

  • Cover the salad with plastic wrap and refrigerate for at least 1 hour.

Serving

  • Stir the salad before serving. Optionally, garnish with additional dill or fresh parsley.
  • Serve chilled, and enjoy!

Notes

This salad tastes better after being chilled overnight. Adjust the dressing and seasoning according to your preferences.
