Cooking

  • Combine rhubarb, sugar, cinnamon, lemon juice, and water in a large saucepan.
  • Cook over medium heat until rhubarb softens, about 10 minutes.
  • Add pectin, stir, and bring to a full rolling boil.
  • Boil for one minute while stirring to activate pectin.

Finalizing

  • Remove from heat, taste, and adjust seasoning if needed.
  • Pour into sterilized jars, leaving headspace.
  • Process jars in boiling water bath for 10 minutes.
  • Let jars cool completely, ensuring seals are tight.
  • Store in a cool, dark place for up to a year.

Notes
