  • 2 cups fresh green beans Trimmed and rinsed
  • 1 cup cherry tomatoes Halved
  • 1/2 cup feta cheese Crumble before adding
  • 1/4 cup red onion Thinly sliced

Dressing Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt To taste
  • Pepper To taste

Preparation

  • Trim the ends of the green beans and rinse them thoroughly under cold water.
  • Bring a pot of water to a boil, add the green beans, and cook for about 4–5 minutes until tender yet crisp.
  • Drain the green beans immediately and rinse them under cold water to stop the cooking process.

Mixing the Salad

  • In a large mixing bowl, combine the cooled green beans, halved cherry tomatoes, crumbled feta cheese, and thinly sliced red onion.

Preparing the Dressing and Serving

  • In a small bowl, whisk together the olive oil and balsamic vinegar. Add salt and pepper to taste.
  • Pour the dressing over the salad mixture and toss gently to coat all ingredients evenly.
  • For the best flavor, chill the salad in the refrigerator for at least 30 minutes before serving.
  • Garnish with extra feta cheese or parsley before serving, if desired.

Notes

This salad is perfect for summer barbecues and can be customized with additional toppings like nuts or fruits. For a dairy-free version, substitute feta with vegan cheese.
