Ingrédients

  • 1 lb ground beef or Italian sausage
  • 1 cup diced bell peppers
  • 1 cup sliced mushrooms
  • 1 cup diced onions
  • 1 jar low-carb pizza sauce about 14 oz (400 ml)
  • 2 cups shredded mozzarella cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions
 

  • In a skillet over medium heat, add olive oil and sauté the diced onions, bell peppers, and mushrooms for 5–7 minutes until softened and fragrant.
  • Add ground beef or sausage to the skillet and cook until browned, breaking it into small pieces. Drain excess fat.
  • Transfer the cooked meat and vegetables into the crock pot.
  • Add the pizza sauce, Italian seasoning, salt, and pepper. Stir to coat evenly.
  • Sprinkle shredded mozzarella cheese over the top.
  • Cover and cook on low for 4–6 hours, or until cheese is melted and bubbly.
  • Serve hot with optional toppings like fresh basil or red pepper flakes.

Notes

For best results, drain excess fat from the cooked meat to prevent the casserole from becoming greasy. Try adding spinach or zucchini for extra nutrients. Leftovers store well in the fridge for up to 4 days or freezer for 3 months.
