  • 1/2 cup mayonnaise Can substitute with Greek yogurt for a lighter version.
  • 1/4 cup sour cream Opt for non-dairy alternatives if needed.
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste Adjust based on preference.
  • Chopped for garnish green onions Adds a fresh touch.

Preparation

  • Gather all your ingredients. If using fresh corn, remove the kernels from the cob.
  • In a large skillet over medium heat, cook the bacon until crispy, about 5-7 minutes. Transfer to a paper towel-lined plate to drain.
  • In a mixing bowl, add the corn and sprinkle in the crumbled bacon. Stir gently.
  • Fold in the shredded cheddar cheese.
  • In a separate bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, salt, and pepper.
  • Pour the dressing over the corn, bacon, and cheese mix. Stir gently until well-coated.
  • Cover the salad and chill in the refrigerator for at least 30 minutes.
  • Before serving, stir the salad and garnish with chopped green onions.

Notes

This salad is great for potlucks and can be made ahead. Adjusting the dressing can offer lighter versions. Store in an airtight container for up to 3 days.
