Ingrédients
  

For the Chicken

  • 4 pieces chicken breasts Boneless and skinless
  • 2 cups Riesling wine Good quality wine is recommended
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth Low-sodium broth is a healthier option
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • to taste salt Adjust for preference
  • to taste pepper Adjust for preference

Preparation

  • Gather all your ingredients and prep them. Chop the onion, mince the garlic, measure out the Riesling wine and chicken broth, and have your chicken breasts ready.

Cooking

  • Heat the olive oil in a large skillet over medium heat. Add the chicken breasts and brown them on both sides for about 5 minutes each.
  • Remove the chicken breasts from the skillet and set them aside.
  • In the same skillet, add the chopped onions and minced garlic. Sauté for 3-4 minutes until soft and fragrant.
  • Pour in the Riesling wine and chicken broth, stirring well to combine and scrape up any brown bits from the bottom of the pan.
  • Stir in the thyme, salt, and pepper to taste, then return the chicken to the skillet.
  • Cover the skillet and reduce the heat to low. Simmer for about 25 minutes until the chicken is fully cooked and tender.

Notes

For a richer sauce, add a bit of cream towards the end of cooking. Consider adding capers or olives for extra flavor. Garnish with fresh parsley or chives before serving.
