Base Ingredients

  • 1 head cauliflower, cut into florets
  • 1 cup buffalo sauce (adjust to taste)
  • 4 soft tortillas (flour or corn)
  • 1 avocado, sliced or mashed (or ranch dressing as an alternative)
  • to taste fresh cilantro, chopped
  • ½ cucumber, sliced (optional)
  • slaw (optional; can be made with cabbage, carrots, etc.)

Instructions
 

Preparation

  • Gather all your ingredients. Cut the cauliflower into bite-sized florets.
  • Slice the avocado and any other toppings you'd like.

Cooking

  • Preheat your oven to 400°F (200°C). Spread the cauliflower florets on a baking sheet in a single layer.
  • Roast for 25-30 minutes until tender and lightly golden.
  • Once roasted, transfer the cauliflower to a bowl and pour in the buffalo sauce. Toss to coat evenly.

Assembly

  • Warm the tortillas in a skillet over low heat or microwave for about 15-20 seconds.
  • Take a warm tortilla and spread a generous amount of mashed avocado or ranch dressing in the center.
  • Spoon the buffalo cauliflower mixture onto the tortilla.
  • Sprinkle chopped cilantro and add any optional toppings like sliced cucumbers and slaw.
  • Fold in the sides and roll the tortilla tightly from the bottom up.
  • Slice the rolled tortilla in half diagonally and serve immediately.

Notes

Store leftovers in an airtight container in the fridge for 2-3 days. Reheat in the microwave or oven.
