Preparation

  • Gather all your ingredients on the kitchen counter and pre-measure them.
  • Preheat your oven to 375°F (190°C).
  • Melt 1/2 cup of unsalted butter in a 10-inch cast iron skillet or baking dish in the preheating oven.
  • In a large mixing bowl, whisk together flour, baking powder, sugar, and salt.
  • Pour the buttermilk into the bowl and stir gently until just combined.
  • Fold in the blueberries and optional vanilla extract.

Baking

  • Do not stir; allow the batter to float on top.
  • Bake for 40–45 minutes until golden brown.
  • Check for doneness with a toothpick in the center.

Notes
