This AIP Chicken Noodle Soup is a comforting, nourishing dish perfect for cozy days. Made with tender chicken, vibrant vegetables, and zucchini noodles, it's a grain-free, dairy-free, and gluten-free twist on a classic comfort food.
Prepare all ingredients by dicing the onion, slicing the carrots and celery, and spiralizing the zucchinis.
Heat olive oil in a large pot over medium heat. Add onion, carrots, celery, and garlic. Sauté for 5–7 minutes until tender.
Pour in the AIP chicken broth and bring to a gentle simmer for 5–10 minutes.
