Main Ingredients

  • 2 tbsp olive oil
  • 1 onion diced
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 2 cloves garlic minced
  • 4 cups AIP chicken broth
  • 2 cups cooked chicken shredded
  • 2 zucchinis spiralized into noodles
  • 1 tsp turmeric
  • salt and pepper to taste
  • fresh parsley for garnish

Instructions
 

  • Prepare all ingredients by dicing the onion, slicing the carrots and celery, and spiralizing the zucchinis.
  • Heat olive oil in a large pot over medium heat. Add onion, carrots, celery, and garlic. Sauté for 5–7 minutes until tender.
  • Pour in the AIP chicken broth and bring to a gentle simmer for 5–10 minutes.
  • Stir in the shredded chicken and cook for another 5 minutes to warm through.
  • Add the zucchini noodles and cook for about 5 minutes until tender.
  • Season with turmeric, salt, and pepper to taste. Stir well and simmer for 10–15 minutes.
  • Garnish with fresh parsley and serve hot.

Notes

For added flavor, include herbs like thyme or dill, or a splash of lemon juice before serving. Avoid overcooking the zucchini noodles to prevent mushiness.
