  • 2 cups cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1 cup corn, fresh or canned
  • 1 medium red bell pepper, chopped
  • 4 cups mixed greens
  • 1 pound chicken breast, sliced

Dressing and Seasonings

  • 1 tablespoon balsamic vinegar

Preparation

  • Wash all fresh produce. Halve the cherry tomatoes and dice the cucumber.
  • Chop the red bell pepper and prepare the corn.

Cooking

  • In a large skillet over medium heat, add the olive oil and allow it to heat up.
  • Add the sliced chicken breast and season generously with salt, pepper, and paprika.
  • Sauté the chicken for about 6-8 minutes until it’s cooked through and golden brown.

Assembling the Salad

  • Combine mixed greens, cherry tomatoes, cucumber, bell pepper, and corn in a large bowl.
  • Gently toss the ingredients together.

Finishing Touches

  • In a small bowl, whisk together the balsamic vinegar with additional salt and pepper.
