Preparation

  • Start by gathering all your ingredients. Rinse the cucumbers and pat them dry.
  • Dice the cherry tomatoes and bell pepper and set aside.

Assembly

  • Carefully slice the cucumbers into thick rounds, about 1-1.5 inches thick.
  • Using a melon baller or a small spoon, scoop out the center of each cucumber slice to form a cup.
  • Fill each cucumber cup generously with hummus using a small spoon or piping bag.
  • Top each cup with diced cherry tomatoes and bell pepper.
  • Drizzle the cups with olive oil.
  • Season with salt and pepper to taste.
  • Chill in the refrigerator for 10-15 minutes or serve immediately.
