Preparation

  • Gather all your ingredients to ensure a smooth cooking process.
  • Dice the chicken and mince the garlic and ginger.

Cooking

  • Place chicken breasts in the bottom of the crockpot.
  • In a medium bowl, combine soy sauce, honey, minced garlic, minced ginger, and sesame oil. Whisk until thoroughly blended.
  • Pour the sauce over the chicken in the crockpot.
  • Cover and set the crockpot to low for 6-8 hours or high for 3-4 hours.
  • Once cooked, remove chicken and shred with two forks.
  • In a small bowl, mix cornstarch and water to create a slurry. Stir this into the sauce in the crockpot.
  • Set the crockpot to high and cook for an additional 30 minutes or until thickened.
  • Return the shredded chicken to the crockpot and toss until evenly coated.
  • Serve over rice, noodles, or your choice of vegetables.

Notes

Store leftovers in an airtight container for up to four days in the fridge, or freeze for up to three months.
